Tasting memo
Strong-bodied green tea with unique notes of artichoke, walnuts, and cacao. Bold taste with balanced bitterness, making this tea powder suitable for latte because the flavors will not be overwhelmed by milk and sugar. Also suitable for dessert making purposes such as baking cakes.

Let's try: Matcha latte
To have final content of 300 ml, whisk 2 g matcha powder with 2 g sugar in 30 ml hot water (100°C ), and add foamed milk.
Adding sugar makes the tea particles uniformly mixed without sinking at the bottom.
For beautiful latte art, try to whisk gently (but strong enough to homogenize the tea) to avoid too much foam at the surface.
To create your perfect latte, you can play around with the amount of powder, milk type, and maybe additional flavor syrups too.
Enjoy!

NEWLY EMERGING TEA IN THE LATTE SCENE

Autumn Tencha

秋碾茶

The sweet indulgence with a beautiful contrast of green and white. Matcha latte has now become one of the most popular picks at the Belgian cafe scene.

Autumn tencha is one of the tea types used in the latte and dessert purposes. Recently, this tea has been gaining popularity in Japan.

The biggest charm is its affordability and its unique flavor characteristics.

Unlike traditional ceremonial matcha, this tea is harvested in autumn without shading processes. This of course saves the production costs, and at the same time adds unique flavor characteristics to the final product.

Autumn tencha has quite strong tastes with often herby and nutty notes. If it's for pure matcha like "usucha (薄茶)", this is not good. But for latte, it's a different story. By mixing with milk and sugar, it becomes a very creamy, tasty latte with balanced flavors of tea and milk ― just like a good espresso.

The sad news is that this attractive tea powder is not easy to find in the shops because it's often just named as "cooking-grade matcha". In the current international matcha market, any types of green tea powder is called "matcha", masking the diversity of green tea powders and their flavor characteristics.

But don't worry! At Toridori, you can always find the information you need in the tea label as well as in our TORIDORI TEA DATA FILE (this page).
